Here is nice article from Briess Malt & Ingredients Co. "Brewing with Briess" blog about the difference between caramel and crystal malt.

The short version is that crystal and caramel malts CAN be the same thing but aren't always. The detail is that all crystal malt is a type caramel malt but not all caramel malt is crystal malt. There are two processes (and end results) for producing caramel malts: Kilning and Roasting. It's a good read that might take a few times through to fully grock.
